Asian Inspired Baked Salmon

If you are a fan of salmon, this will be the recipe for you.  If you’re not, then let this recipe inspire you to try it!

A few months ago, we visited some friends and it was served for dinner.  As soon as I tried it, I knew I needed to get ahold of this recipe and try it for myself.  I hope that you enjoy it as much as I did.

Ingredients:

• 2 tablespoons miso paste (can buy it at an Asian grocery store)

• 2 tablespoons soy sauce

• 1 teaspoon sugar

• 4-6 tablespoons of canola or vegetable oil

• 2 salmon fillets

Directions:

1. Put the salmon into an oven-safe dish.

2. Stir the miso paste, soy sauce, sugar and oil and put on top of the salmon.

3. Marinade for 1-2 hours (in the fridge).

4. Cover the dish with aluminum foil and bake at 350º F for 40 minutes.

5. Remove the foil and broil in LOW for about 10 minutes.

    Optional: You can squeeze half a lemon and/or minced garlic and apply to the salmon during the last 10 minutes of cooking.
